Vegetable Sandwiches
Appetizers8 oz package of cream cheese
2 carrots
1 bell pepper
1
cucumber
1 stalk celery
1 small onion
mayonnaise
1/2
teaspoon salt
Dash horseradish (if desired)
1. Allow cream cheese to come to room temperature. Grate vegetables on fine side of grater or grate in blender. Drain.
Mix vegetables with cream cheese and add enough mayonnaise to make mixture spreading consistency.
Just before making sandwiches, add salt and a little horseradish, if desired.
Makes three to four dozen party sandwiches.
