Fluffy White Frosting

Cakes and Icing

Makes enough to fill and frost an eight-inch double-layer cake.

2 egg whites
3/4 cup of sugar
1/2 teaspoon cream of tartar
Dash of salt
2.5 teaspoons cold water
1 teaspoon vanilla

  1. Combine egg whites, sugar, cream of tartar, salt and water in the top of a large double boiler, beat until blended.

  2. Place top over simmer water.

  3. Cook, beating constantly with an electric or rotary beater about seven minutes or until mixtures stands in firm peaks.

  4. Remove from water, stir in vanilla.
